Trini's Tacos Adds Flavor to Post Road Restaurant Scene

Young entrepreneur draws on Mexican-American heritage to create a new eatery

When life hands you lemons, make enchiladas. That pretty much sums up the experience of Charlene Wesley, proprietor of Trini's Tacos in North Kingstown. About a year ago, Wesley was contemplating next steps after a layoff notice from her advertising job at Comcast. "The company was very nice," she recalled. "They gave us plenty of notice and a good severance package." Wesley said she has always wanted to be her own boss and her family had promising resources she could capitalize on. Her mother, Mercedes Wesley, has spent years in the restaurant business and knew how to run a kitchen. Mercedes also has connections with an experienced restaurateur who served as a mentor. How did I miss the mashed potato tacos?! I was too busy enjoying my pork burrito, with hands down, the best salsa on earth. It's not the diced tomato kind of salsa, but a mild green tomatillo salsa - not spicy, but with a smooth roasted salsa. The kids liked their cheese quesadillas and spanish rice with onions.
